Stove Top Quinoa and Black Beans
1 cup Quinoa
2 cups water
1 cup salsa
1 can black beans (rinsed)
1 cup corn
Salt and Pepper to taste (optional)
1. Heat olive oil in a large skillet. Brown the Quinoa.
2. Add remaining ingredients, bring to a boil, reduce heat, cover and simmer 20-30 minutes or until Quinoa fully cooked.
